In an attempt to stand by my unofficial, stereotypical, trite, and vague new year’s resolution to “eat healthier,” I’ve replaced my delicious buttermilk waffle with a somewhat delicious whole grain version and topped it with lemon greek yogurt and honey instead of yummy, yummy syrup. Funny thing is, I think I like it just as much!
It’s kind of like a quick, low budget option of these lemon curd crepes that look way more delicious, but also as though they’d be way more work (which was not a provision of my resolution).
